About the Cuisine
The Basque Country is a region known for its strong culinary heritage, exceptional ingredients, and deep sense of hospitality. It is also one of the world’s most innovative food cultures. Basque cooking is built on one simple philosophy: Start with the best ingredients, treat them with respect, and let their natural flavors shine. At its heart is the tradition of gathering around the table to enjoy pintxos, regional wines, and meals that highlight craftsmanship, hospitality, and the natural flavors of each ingredient.
Basque cuisine has its own distinct identity. Basque cooking is centered on quality ingredients, simple preparation, and cooking over open fire to let natural flavors shine. Unlike many Spanish cuisines that feature bold spices and rice dishes, or classic French cuisine known for rich sauces and intricate techniques, Basque cuisine focuses on fresh seafood, premium meats, seasonal produce, and shareable pintxos. The result is a style of cooking that is refined yet approachable, where quality, craftsmanship, and hospitality take center stage
Pintxos and tapas are both small plates meant to be shared. Pintxos are a signature tradition of the Basque Country while tapas originated in Spain. Pintxos are traditionally served on a slice of bread and secured with a skewer, but today many modern pintxos are no longer served on bread or with a skewer but the emphasis remains on thoughtfully crafted, bite-sized creations. Tapas, on the other hand, are typically small shared dishes served in a variety of styles.
Our guests love our Croquetas, Patatas Bravas, Paellas, and grilled seafood. If it’s your first visit, we recommend starting with a few pintxos, sharing a couple of tapas, and finishing with one of our signature paellas for the full CTZN experience.
Yes! We always serve our Gildas, one of the Basque Country’s most iconic pintxos. Throughout the year, we also feature traditional Basque specialties like Txuleta and Bacalao as seasonal or limited-time specials.
